10 new breakfast ideas for school holidays

If you’re anything like us you’re no doubt struggling with new meal ideas and breakfast is one of the worst!!

 

  1. Scrambled Eggs with added extras: Whip up a tasty and nutritious breakfast by adding diced vegetables like peppers, spinach, and mushrooms to your scrambled eggs.
  2. Overnight Chia Pudding: Prepare chia seed pudding the night before by mixing chia seeds with your choice of milk (we like hazelnut). In the morning, top it with fresh fruits, nuts, or granola for a yummy dessert breakfast.
  3. Banana Pancakes: Mash a ripe banana and mix it with eggs and a bit of flour to create a simple pancake batter. Cook the pancakes on a pan and serve with maple syrup or your favorite toppings.
  4. Yogurt Parfait: Layer Greek yogurt with your favorite fruits, granola, and a drizzle of honey for a refreshing and easy-to-make breakfast (my favourite)
  5. Breakfast Quesadillas: Fill whole wheat wraps with scrambled eggs, cheese, and vegetables like tomatoes and spinach. Cook them on a skillet until the cheese melts and the tortilla is crispy.
  6. Smoothie Bowl: Blend together your choice of fruits, yogurt, and a liquid base like almond milk to create a thick smoothie. Pour it into a bowl and top with sliced fruits, nuts, and seeds for added texture.
  7. Avocado Toast: Toast a slice of whole grain bread and top it with mashed avocado, a squeeze of lemon juice, and a sprinkle of salt and pepper. Optional additions include sliced tomatoes, feta cheese, or a poached egg.
  8. Breakfast Burritos: Fill tortillas with scrambled eggs, black beans, cheese, and salsa. Roll them up and heat them on a skillet until warm and crispy.
  9. Porridge with Toppings: Prepare a warm bowl of porridge using rolled oats and your choice of milk. Add your favorite toppings like sliced fruits, nuts, and a drizzle of honey or maple syrup.
  10. Fruit and Nut Energy Bars: Make a batch of homemade energy bars using nuts, dried fruits, oats, and a binding ingredient like honey or nut butter. These can be made in advance and enjoyed as a quick and nutritious breakfast on busy mornings.
